- 1 medium sweet potato, (about 8 oz.) sliced lengthwise into four 1/4-inch thick slices
- 1 Tbsp. Pure Blends™ Coconut Oil Plant-Based Butter
- 1/2 cup microgreens
- 1/2 cup chopped mixed heirloom tomatoes
- 1 Tbsp toasted pumpkin seeds
- 1 Tbsp fresh lime juice
Toast sweet potato slices in toaster until tender.
Top with Pure Blends™ Coconut Oil Plant-Based Butter, microgreens, tomatoes and pumpkin seeds. Drizzle with lime juice.
